Don’t bother trying to count all the types of couscous in this world. A dish with infinite varieties, couscous goes well beyond the boundaries of North and West Africa and can be found in the farthest reaches of the planet. Globalized, ever-moving, and impossible to pin down, couscous nevertheless remains a homey dish that every family, everywhere, adapts to its taste.

Six chefs, all couscous masters, share recipes that bridge the nomadic and the local. Six dishes rooted in their homelands yet fed from abroad. Six takes on couscous that have travelled the world – and will make you do the same.
